Coffee cake recipe

A Mastertons coffee cake recipe

We experimented with the Blend of the Bay and baked a simply delicious coffee cake. Feel free to use any of your favourite blends.


  • 1 ¼ Cups Cake flour
  • 1 Cup sugar
  • 1 tsp Baking Powder
  • ½ tsp salt
  • 3 x Double shot espresso 60ml each (180ml total) (Mastertons coffee)
  • 70ml Almond Breeze Milk
  • 1 tsp Vanilla essence
  • 1/3 cup vegetable oil
  • 1 tsp white vinegar


Preheat oven to 180 degrees. Mix dry ingredients in a bowl. Mix liquids into a jug.Combine liquids into dry ingredients and mix well. Pour over into cake tin and bake for +- 30min

Topping/ icing :

  • 250ml Orley Whip cream
  • 2 tsp Vanilla essence
  • 1 single shot espresso Mastertons
  • 1/3 cups Sugar
  • 125g Mastertons chocolate coated coffee beans


Mix all ingredients into blender and blend until stiff, let cool in fridge for 45min. Layer cake once the cake has cooled. Decorate with chocolate coated coffee beans and enjoy!
